Brownies

2 C. sugar 1 1/2 C. all purpose flour |
1 tsp. salt 1/2 c. powdered Cocoa |
Mix these ingredients well and add:

4 eggs 1/4 c. water |
1 C. cooking oil 1 Tbsp. vanilla |
Mix well and add 1 C. chopped pecans. Pour into sprayed pan and bake for 30 to 40 minutes in preheated 350o oven.

Congo Bars
Ingredients:

1 box light brown sugar 2-1/2 cups self-rising flour 3 eggs 3/4 cup cooking oil* *You can use ½ c. oil, ¼ c. water for less-oily cookies. |
1 tsp. vanilla 1 cup chopped nuts 1-12 oz. pkg. semi-sweet chocolate morsels

Directions:
Mix cooking oil with brown sugar until smooth. Add eggs, beating after each. Add vanilla. Alternately add oil and flour, mixing thoroughly after each addition. Add nuts and chocolate morsels. Bake in large prepared pan at 350 for 30 minutes. Cut into squares.

Ginger Stars
This recipe makes good Gingerbread Men.
Ingredients:

1/3 cup butter 1/2 cup sugar 1/2 cup dark molasses 1 egg, beaten 2-1/2 cups all-purpose flour |
1/2 tsp. cinnamon 1/2 tsp. nutmeg 1-1/2 tsp. ginger 1/2 tsp. baking soda 1/2 tsp. salt |
Directions:
Cream butter and sugar until smooth and light. Add molasses and egg, stirring to blend. Sift together flour, salt, spices, and soda. Add to cookie mixture; blend. Chill dough thoroughly about one hour. Roll out on well-floured pastry cloth to 1/8 inch thick. Cut with star cookie cutter. Place on buttered baking sheet and bake in 375 degree oven for 12 minutes.

Refrigerator Cookies (I got this recipe from Miss Jenkins, my junior high school home ec teacher.)
(Yield: 6 dozen cookies)
Ingredients:

1/2 cup shortening 1-3/4 cup all-purpose flour 1 cup sugar 1/4 tsp. salt |
1 beaten egg 1 tsp. baking powder 1 tsp. vanilla (or lemon) flavoring 1/2 cup finely chopped nuts |
Directions:
Cream shortening and sugar. Add beaten egg and flavoring alternately with sifted dry ingredients. (Chopped nuts are mixed with sifted dry ingredients.) Form in long rolls 1” in diameter. Wrap rolls in waxed paper and place in refrigerator until firm.
Slice cookies 1/16” thick and bake at 350 for 10 minutes or until golden brown.

Old Fashioned Tea Cakes
Ingredients:
3 eggs
1 1/2 cups sugar
1 stick of softened margarine
1 teaspoon salt
1 teaspoon vanilla flavoring
Flour
Directions:
Sift flour into large biscuit bowl, make a well in flour. Put all the ingredients in and mix with hand until stiff enough to roll out on a floured board. Roll thin, cut with cookie cutter (or glass), place on cookie sheet and bake at 375o until light brown. Store in tight container when cool.
